Fun with Mondays & Cake!

Mondays, the bane of existence.

I often find myself busy with culinary experiments on this day and today was no exception. My experiment did not turn out as hoped but still a worthwhile one.

Today’s experiment involved the ‘Soda Cake’ recipe by way of The Hungry Girl.

The recipe itself is quite simple. 1 box of Moist Deluxe cake mix and 1 can of Zevia (or other diet) soda mixed together. Bake at 350 degrees F for the amount of time suggested on the box for the size/type of cake being made.

I tried out this recipe with Moist Deluxe Red Velvet cake mix, 1 can of Dr. Zevia (the Dr. Pepper-inspired flavor) and 18 cupcake papers. While the back of the cake mix says to add 1/4 cup of all-purpose flour to the mix before the liquids for high-altitude. I decided to forgo this step as I wasn’t sure the cake would need it. I mixed, I divided the batter into 18 cupcakes and baked for the suggested 22 minutes. I let the cupcakes cool in the pan as they would not come out while very warm.

Things learned:

  • The recipe does not play well with cupcakes. Too delicate to withstand the unwrapping and pan removal processes.
  • That 1/4 cup of AP flour is needed because the batter was too moist after baking.
  • Red Velvet & Dr. Zevia is a fantastic flavor combination.
  • 22 minutes of baking time was too long. Needs less baking time and, of course, that 1/4 cup of AP flour.
  • An extra 2 tablespoons or so of unsweetened cocoa powder into the mix would be fabulous.


I had intended to take these cupcakes to the critique group today but have decided against such. They fall to pieces coming out of the pan and when unwrapping. 50% of the cake sticks to the wrappers and the cake is messy including the staining of the fingers. Red Velvet cake mixes are extremely red (as in a ton of red food coloring) and will stain everything and anything whether powdered, freshly mixed or baked. Good thing that it is quite tasty.

I’m certain chocolate cake & Dr. Zevia will also be very good but I’ve been on a red velvet cake kick of late. I use to hate red velvet but now it is one of my favorites. Other flavor combination that I may try in the future are Black Cherry soda & Devil’s Food Cake, Lemon-Lime Soda & Vanilla Cake, Ginger Ale & Vanilla cake mixed orange zest, saffron and chopped almonds.

As for the critiques – 1 down, 1 to go. Suppose I should get back to work.
